Full DISCLAIMER: I've never taught Food Science 🙊🧪🍩, but my former colleague reached out to me saying her formal observation with her admin was coming up and she wanted ME to create a lesson that would WOW her admin and make her leave her alone for the rest of the school year. 🤪 She was going to be in her Lipids unit, specifically teaching her students the difference between Unsaturated vs. Saturated Fats.
After having already given her students an introduction to fats (saturated vs. unsaturated), she was looking for a hands-on activity that would pair well with the two labs she planned: The first was cookie lab, which required each group of students to bake a batch of chocolate chip cookies, each using a different type of fat in their cookies. She also arranged for a donut lab that would allow students to analyze the effect of cooking time on fat absorption by frying 4 batches of donuts for different lengths of time (2, 4, 6, &10 minutes) and weighing them before and after the cooking process was complete.
For the lessons that would WOW, we decided to have her students recreate the fatty acid chains using Play-Doh when provided with a description of each of the 3 chains!
